I have a confession: I am completely obsessed with sweet potatoes.
They are my go to and one of my all-time favorite foods. I grew up with a mother who is a former hippie. She did not believe in feeding my sister and me processed or sugary foods. Marmie was always on the lookout for ways to make our diets healthy. Some of the things we consumed as children were a little weird. Like, when she put blue green algae in our orange juice. Other things like these healthy sweet potato fries were out-of-this-world good.
This recipe is a momma Hopkins original. She is the woman who taught me how nourish my body with delicious and healthy food. You all are going to fall in love with these little guys!
(Peeling the sweet potatoes is optional)
Fun fact: In addition to being delightful, sweet potatoes are a great source of fiber, vitamin A, vitamin C, manganese, and many other nutrients!

- 1 3 pound bag sweet potatoes
- 1/4-1/2 cup olive oil
- 1 tsp onion powder
- 1 tsp basil
- 1 tsp garlic powder
- 2 cloves minced garlic
- 1/4 tsp ginger
- 1/4 tsp chili powder
- to taste Salt & pepper
- 1 tsp cajun seasoning (optional) if using this leave out salt

- Preheat oven to 400o F. Line a baking sheet with foil or parchment paper.
- Wash sweet potatoes and peel sweet potatoes (you can leave the peel on. Dice into 1 inch cubes.
- In a mixing bowl add sweet potatoes, olive oil, onion powder, basil, garlic powder, ginger, chili powder, salt, pepper, minced garlic cloves and additional spices. Toss the mixture until the sweet potatoes cubes are evenly coated. Spread out evenly on lined baking sheet.
- Roast sweet potatoes 30-45 min stirring every 10 minutes or so until done. They should be crispy on the outside and soft on the inside.
- Remove from oven and enjoy!
This recipe is one that can be easily modified. If you don’t like a spice leave it out. You can add more or less of any of the seasonings. I always make this recipe to taste. These little guys are easy to make and delicious. They are my go to for meal prep or dinners with friends!
